Keywords: Galináceo. Caracterização química. dc.description.abstractThe aim of this study was to perform the chemical characterization of the meat of the Capão of Freamunde, as part of the registration procedure for protected geographical indication (PGI) designation and compare with roaster and broiler chickens. Chemical characterisation was perfor-med on chicken breast and leg meat, taking into account the following parameters: moisture, crude protein, fat and ash contents. The fatty acid profile was evaluated by gas chromatography after base-catalysed transesterification with sodium metho-xide. Chemical analysis of Capão de Freamunde meat showed high protein and moisture contents, and a rather high fat level. A high variability of chemical parameters was observed, mainly on fat content, due to both breed and production practices effects.

keywords: Capon. Meat. Chemical characterization.
