| Abstract: | In this paper we make a thorough analysis of food from a sociological perspective. But not only. To do this, we first separately carry out a state of the art on the relationship of food with memory, gender, globalization and risk society in the late modernity. Then, in order to cross all these variables, as well as the question of food as an axis of national identity and perennial cultural trait, we analyze, first, a brief history of Portuguese gastronomy throughout history and then the analysis of the most typical Portuguese gastronomic dish: codfish. |
| Description: | Neste artigo, procuramos realizar uma análise profunda da comida de um ponto de vista sociológico, mas não só. Para tal, primeiro realizamos separadamente um estado da arte sobre a relação da alimentação com a memória, com o gênero, com a globalização e com a sociedade do risco da modernidade tardia. Depois, para cruzarmos todas estas variáveis, bem como a questão da comida como eixo da identidade nacional e traço cultural perene, analisamos, primeiro, uma breve génese da gastronomia portuguesa ao longo da história e, em seguida, a análise do mais típico prato gastronómico português: o bacalhau. |
