dc.descriptionEsta presente exploração de carácter teórico-prático tem origem naquela que constitui ser para mim uma paixão antiga: a pastelaria. Através de um percurso delimitado pelos quatro momentos de uma refeição − entradas, primeiro prato, segundo prato e sobremesa − são concebidas análises aos múltiplos pontos de contacto entre as esferas da arquitectura e da gastronomia, sempre em contante e gradual aproximação à arte da pastelaria, aquela que se considera constituir a participante gastronómica mais intimamente relacionada − e relacionável − com a arquitectura. Assim, desenvolve-se uma investigação em torno do domínio gastronómico na sua relação com a produção espacial, indagando-se sobre o papel do paladar na produção arquitectónica. Para tal convocam- se múltiplas construções mentais, mais ou menos apoiadas em fundamentos teóricos diversificados, procurando-se identificar e formalizar um conjunto de preâmbulos limitados − triângulo arqui-gastronómico −, capaz de se constituir orientador do processo de percepção do sabor arquitectónico e, consequentemente, chave a um aproximar à experienciação da degustação espacial. A concretização final desta busca gradual, a sobremesa, culmina na materialização física de quatro projectos-síntese de pastelaria, reflexos de quatro diferentes degustações espaciais de obras arquitectónicas de renome, constituindo-se estes fruto cumulativo do percurso investigativo teórico e prova de que a arquitectura pode ser sentida com a boca e ter, de facto, sabor.
dc.description.abstractThis theorical and practical exploration has its origins in that which constitutes to me a very old and beloved passion: pastry. Through a course delimited by the four stages of a proper meal − starters, first course, second course and dessert − analysis are conceived on the multiple points of contact between the realms of architecture and those of gastronomy, gradually and in constant approach to pastry, that which is believed to be the most intimately related − and relatable − gastronomic participant within architecture. Therefore, it is developed an investigation concerning the gastronomical domain in its relationship to spatial production, questioning the role of taste on architectural production. With such purpose, multiple mental elaborations are called in, more or less supported by diverse theoretical foundations, aiming at identifying a set of limited preambles − archi-gastronomical triangle −, capable of constituting guidance throughout the process of architectonical taste perception and, consequently, a key factor to the approach of a spatial tasting experience. The final climax of this gradual research takes the shape of the physical materialization of four pastry summary-projects, reflex of four different spatial tastings of renowned architectural constructions, constituting themselves as a cumulative result of the ongoing theoretical course of investigation and vivid proof that architecture can be tasted and has, indeed, flavour.
